For the Sandwich:

  • 4 slices rustic bread
  • 2 tablespoons mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Cook the Mushroom Mixture: In a medium skillet over medium heat, melt 1 tablespoon butter. Add mushrooms and cook for 5–6 minutes until browned and softened. Stir in garlic, salt, and pepper, and cook for 1 minute until fragrant. Remove from heat.
  2. Assemble the Sandwich: Spread mayonnaise evenly on one side of each bread slice. Place 2 slices of bread, mayo side down, on a clean surface. Layer with half the mozzarella, the mushroom mixture, the remaining mozzarella, and the cheddar. Top with the remaining bread slices, mayo side up.
  3. Grill the Sandwich: Heat a skillet or griddle over medium-low heat and melt the remaining 1 tablespoon butter. Place sandwiches in the skillet and cook 3–4 minutes per side until golden brown and cheese is melted. Sprinkle with parsley before serving, if desired.
