This Garlic Parmesan Chicken and Potatoes recipe is a delicious one-pan dinner that’s easy to make and packed with flavor. Tender chicken thighs and golden baby potatoes are seasoned with garlic, Parmesan cheese, and herbs, then roasted to perfection.

For the Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley for garnish

For the Potatoes:

  • 1 ½ pounds baby potatoes, halved
  • 1 tablespoon olive oil
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C).
  2. Prepare Potatoes: In a bowl, toss halved baby potatoes with olive oil, half of the minced garlic, ¼ cup Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Season Chicken: Arrange chicken thighs and potatoes on a baking sheet. Drizzle chicken with olive oil, rub with paprika, remaining garlic, and salt and pepper.
  4. Bake: Bake for 40–45 minutes, flipping potatoes halfway, until chicken reaches 165°F (74°C) and potatoes are golden and tender.
  5. Finish and Serve: Sprinkle remaining Parmesan over chicken and potatoes in the last 5 minutes. Garnish with parsley before serving.

Notes

  • For extra crispiness, broil for 2–3 minutes at the end.
  • Boneless chicken can be used; adjust cooking time.
