Instructions

  1. Heat the fat: In a large pan set over medium heat, warm the olive oil and butter together until melted and combined.
  2. Add onions and season: Add the thinly sliced onions, sugar, salt, and black pepper to the pan. Let them cook undisturbed for 5 minutes to start softening and browning.
  3. Caramelize onions: Stir the onions occasionally for about 15 more minutes until they turn golden brown and develop deep flavor. Then add the balsamic vinegar and thyme, cooking for an additional 5 minutes to infuse the flavors.
  4. Prepare the pastry: Meanwhile, roll out the puff pastry on a floured surface and cut it into rectangles. Place the cut pastry in the refrigerator for 10 minutes to chill and firm up.
