Ingredients

Scale

For the Chicken and Vegetables:

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 small yellow onion, diced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1/4 tsp paprika
  • 4 cups low-sodium chicken broth

For the Biscuit Dumplings:

  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup whole milk
  • 1 tbsp unsalted butter
  • 1 (16 oz) can refrigerated biscuit dough, cut into small pieces
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Chicken: Place chicken, onion, carrots, celery, garlic, salt, pepper, thyme, parsley, and paprika in the slow cooker.
  2. Cook the Chicken Mixture: Pour in chicken broth, cream of chicken soup, and milk. Cook on low for 6–7 hours or on high for 3–4 hours until chicken is tender.
  3. Shred the Chicken: Remove chicken, shred it, and return it to the slow cooker. Stir in butter.
  4. Add the Dumplings: Place biscuit pieces on top of the mixture. Cook on high for 1–1.5 hours until dumplings are fluffy.
  5. Serve: Garnish with parsley and serve warm.

Notes

  • For extra flavor, add a bay leaf while cooking and remove before serving.
