For the Chicken and Vegetables:
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 small yellow onion, diced
- 3 carrots, peeled and sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
- 1/4 tsp paprika
- 4 cups low-sodium chicken broth
For the Biscuit Dumplings:
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup whole milk
- 1 tbsp unsalted butter
- 1 (16 oz) can refrigerated biscuit dough, cut into small pieces
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Chicken: Place chicken, onion, carrots, celery, garlic, salt, pepper, thyme, parsley, and paprika in the slow cooker.
- Cook the Chicken Mixture: Pour in chicken broth, cream of chicken soup, and milk. Cook on low for 6–7 hours or on high for 3–4 hours until chicken is tender.
- Shred the Chicken: Remove chicken, shred it, and return it to the slow cooker. Stir in butter.
- Add the Dumplings: Place biscuit pieces on top of the mixture. Cook on high for 1–1.5 hours until dumplings are fluffy.
- Serve: Garnish with parsley and serve warm.
Notes
- For extra flavor, add a bay leaf while cooking and remove before serving.
- You can use homemade biscuit dough or frozen dumplings if preferred.
