Lemongrass Chicken Marinade

  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt


Instructions

  1. Prepare Lemongrass: Cut off the root end of the lemongrass stalk, remove the tough outer layers, finely chop the tender parts, and smash them lightly with the side of a knife to release the oils.
  2. Make Marinade: In a mixing bowl, combine the minced lemongrass, garlic, fish sauce, soy sauce, honey, lime juice, vegetable oil, black pepper, and salt to create a fragrant marinade.
  3. Marinate Chicken: Add the boneless chicken thighs to the bowl and thoroughly coat each piece in the marinade.
  4. Chill: Cover the bowl and refrigerate for at least 1 hour to allow flavors to penetrate—overnight marinating is recommended for deeper flavor.
  5. Preheat Grill: Heat your grill to medium-high heat to ensure proper cooking temperature.
