For the Greek Yogurt Filling:

  • 2 cups plain or vanilla Greek yogurt
  • 23 tablespoons honey or maple syrup (to taste)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips or chopped fruit (optional)

For the Oat Cookie Layers:

  • 1 1/2 cups rolled oats
  • 1/2 cup almond flour
  • 1/4 cup nut butter (almond or peanut)
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons milk (dairy or non-dairy)

Instructions

  1. Prepare the Greek Yogurt Filling: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and chocolate chips or fruit if using. Mix well and set aside.
  2. Make the Oat Cookie Layers: In another bowl, stir together the oats, almond flour, nut butter, honey or maple syrup, cinnamon, salt, and milk until a sticky dough forms.
  3. Assemble the Ice Cream Sandwiches: Line an 8×8-inch pan with parchment paper. Press half of the oat mixture into the bottom of the pan to form an even layer. Spread the yogurt mixture evenly over the base. Top with the remaining oat mixture, pressing gently to flatten.
  4. Freeze and Serve: Freeze for at least 3–4 hours or until completely firm. Once frozen, lift out of the pan and cut into squares or rectangles. Store in the freezer until ready to eat.

Notes
