- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¾ cup almond flour
- ¼ cup oat flour
Optional:
- ½ cup dairy-free chocolate chips
Instructions
- Preheat oven: to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- Prepare wet ingredients: In a large bowl, whisk together mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla until smooth.
- Combine dry ingredients: In a separate bowl, mix cocoa powder, baking soda, baking powder, salt, almond flour, and oat flour. Gradually add dry ingredients to wet mixture until just combined.
- Add optional: Fold in chocolate chips if using. Pour batter into pan and spread evenly.
- Bake: for 25–30 minutes or until a toothpick inserted in the center comes out mostly clean.
- Cool: Let cool completely before slicing.
Notes
- For a vegan version, substitute flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water).
