- 3 carrots, peeled and sliced

- 2 medium potatoes, peeled and cubed
- 1 zucchini, chopped
- 1 cup green beans, trimmed and halved
Seasonings and Garnish:
- 1 (14.5 oz) can diced tomatoes with juice
- 4 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Brown the Chicken: Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and season with salt and pepper. Cook for 5–7 minutes until browned. Remove chicken and set aside.
- Sauté Vegetables: In the same pot, sauté onion and garlic until fragrant. Add carrots, celery, and potatoes. Cook for 5 minutes.
- Cook the Stew: Return chicken to the pot with zucchini, green beans, tomatoes, and broth. Add thyme, rosemary, and bay leaf. Simmer for 25–30 minutes until chicken is cooked and vegetables are tender.
- Finish and Serve: Adjust seasoning, remove bay leaf, and garnish with parsley before serving.
