Chicken and Vegetables:

  • pounds boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, peeled and cubed
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and halved

Seasonings and Garnish:

  • 1 (14.5 oz) can diced tomatoes with juice
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Brown the Chicken: Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and season with salt and pepper. Cook for 5–7 minutes until browned. Remove chicken and set aside.
  2. Sauté Vegetables: In the same pot, sauté onion and garlic until fragrant. Add carrots, celery, and potatoes. Cook for 5 minutes.
  3. Cook the Stew: Return chicken to the pot with zucchini, green beans, tomatoes, and broth. Add thyme, rosemary, and bay leaf. Simmer for 25–30 minutes until chicken is cooked and vegetables are tender.
  4. Finish and Serve: Adjust seasoning, remove bay leaf, and garnish with parsley before serving.
