  • 2 ice cubes
  • 3 to 5 tablespoons ice water

Instructions

  1. Cook Chickpeas: Place the rinsed and drained chickpeas into a pot. Cover them with water and add the baking soda. Bring the water to a boil, then reduce the heat and simmer for about 20 minutes until the chickpeas are soft and tender.
  2. Prepare Garlic: While the chickpeas are cooking, combine the minced or grated garlic with the freshly squeezed lemon juice in a small bowl. Let this mixture sit for 10 minutes to mellow the garlic’s sharpness and blend the flavors.
  3. Blend Chickpeas: Once the chickpeas are cooked, drain and rinse them under cold water. Set aside 1 tablespoon of chickpeas for garnish, if desired. Place the remaining warm chickpeas into a food processor or blender.
  4. Add Lemon-Garlic and Tahini: Strain the lemon and garlic mixture into the food processor with the chickpeas. Add the kosher salt and blend until the mixture is smooth. Then add the tahini and ice cubes, and continue blending until the hummus reaches a creamy texture.
  5. Adjust Consistency: If the hummus is too thick, add ice water one tablespoon at a time while blending until you achieve the desired creamy consistency.
  6. Season and Serve: Taste the hummus and adjust salt and additional lemon juice as needed. Transfer it to a serving plate and create a shallow well in the center. Drizzle with extra virgin olive oil and garnish with the reserved chickpeas, a sprinkle of paprika or sumac, and za’atar to finish.
