Peach Syrup

Instructions
- Make Peach Syrup: In a saucepan, combine chopped peaches, 1/2 cup sugar, and 1/2 cup water. Bring the mixture to a simmer over medium heat and cook for 5 to 10 minutes until the peaches become very soft and the syrup is infused with peach flavor.
- Cool and Strain: Remove the saucepan from heat and let the peach mixture cool to room temperature. Then strain it through a fine mesh sieve into a pitcher to separate the syrup from the peach solids. Optionally, keep some pulp for added texture if desired.
- Add Lemon Juice: Juice fresh lemons to yield approximately 3/4 cup of lemon juice. Pour the fresh lemon juice into the pitcher containing the peach syrup and stir well to combine.
- Mix Lemonade: Add 3 cups of cold water to the peach and lemon mixture. Stir thoroughly and taste. Adjust sweetness or tartness by adding more sugar or water according to your preference.
- Chill and Serve: Refrigerate the lemonade for at least 30 minutes up to 2 hours to allow flavors to meld. Serve the peach lemonade over ice, garnished with peach slices, lemon slices, and fresh mint if desired.
