Marinade:

  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons whole grain mustard (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar or lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 4 boneless, skinless chicken breasts
  • Chopped fresh parsley for garnish

Instructions

  1. Making the Marinade: In a bowl, whisk together Dijon mustard, honey, whole grain mustard, olive oil, vinegar or lemon juice, garlic, salt, and pepper.
  2. Marinating: Place chicken breasts in a resealable bag or shallow dish. Pour half of the marinade over them and reserve the other half for basting. Marinate in the refrigerator for at least 30 minutes, preferably 2 to 4 hours.
  3. Grilling: Preheat grill to medium-high heat. Grill chicken for 6 to 7 minutes per side or until internal temperature reaches 165°F, basting with reserved marinade if desired.
  4. Baking: Preheat oven to 400°F. Place marinated chicken in a greased baking dish and bake for 25 to 30 minutes, basting halfway through with reserved marinade.
  5. Resting and Serving: Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.
