Ingredients
Scale
Marinade:
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons whole grain mustard (optional)
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar or lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional:
- 4 boneless, skinless chicken breasts

Instructions
- Making the Marinade: In a bowl, whisk together Dijon mustard, honey, whole grain mustard, olive oil, vinegar or lemon juice, garlic, salt, and pepper.
- Marinating: Place chicken breasts in a resealable bag or shallow dish. Pour half of the marinade over them and reserve the other half for basting. Marinate in the refrigerator for at least 30 minutes, preferably 2 to 4 hours.
- Grilling: Preheat grill to medium-high heat. Grill chicken for 6 to 7 minutes per side or until internal temperature reaches 165°F, basting with reserved marinade if desired.
- Baking: Preheat oven to 400°F. Place marinated chicken in a greased baking dish and bake for 25 to 30 minutes, basting halfway through with reserved marinade.
- Resting and Serving: Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.
Notes
- Pair with roasted vegetables, rice, or a green salad.
- Consider using chicken thighs for juicier meat.
