For the Shrimp:
- 1 pound large shrimp (peeled and deveined)
- 1/2 cup candied walnuts
- 1/2 cup cornstarch (for coating)
- 1 egg white
- 1 cup vegetable oil (for frying)
- Salt and pepper to taste
- Sliced green onions for garnish (optional)
Instructions
- Prepare the Honey Mayo Sauce: In a small bowl, whisk together mayonnaise, honey, sweetened condensed milk, and lemon juice. Set aside.
- Coat the Shrimp: Toss shrimp with egg white and a pinch of salt and pepper. Coat with cornstarch until evenly covered.
- Fry the Shrimp: Heat vegetable oil in a skillet. Fry shrimp in batches until golden and crispy.
- Combine and Serve: Toss fried shrimp with honey mayo sauce. Fold in candied walnuts and garnish with green onions. Serve over steamed rice.
Notes
- For homemade candied walnuts, simmer sugar and water, add walnuts, then toast in the oven.
- Lightly salt the shrimp before coating for more flavor.
