Ingredients
Scale
Chicken Mixture
- 2 cups cooked chicken, shredded
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt to taste
- 1 tablespoon olive oil
Quesadillas
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend recommended)
- 1/4 cup hot honey
Instructions
- Heat the oil: Heat the olive oil in a skillet over medium heat to prepare for cooking the chicken mixture.
- Cook the chicken: Add the shredded chicken, chili powder, garlic powder, and salt to the skillet. Stir and cook until the chicken is heated through and well coated with the spices.
- Prepare tortilla: Place one flour tortilla flat in the skillet to begin assembling the quesadilla.
- Add cheese: Sprinkle half of the shredded cheese evenly on one half of the tortilla to start the layering process.
- Add chicken layer: Spoon the seasoned chicken mixture over the cheese layer, spreading it evenly.
- Drizzle hot honey: Drizzle the hot honey over the chicken mixture to add a sweet and spicy flavor contrast.
- Top with cheese: Sprinkle the remaining cheese on top of the honey and chicken for extra meltiness and binding.
- Fold and cook: Fold the tortilla over to cover the fillings and cook until the underside is golden brown and crispy, then carefully flip and cook the other side until golden.
- Repeat: Repeat the process with the remaining tortillas and ingredients for all quesadillas.
- Serve: Remove from skillet, cut the quesadillas into wedges, and serve immediately while hot and cheesy.
Notes
- Use a non-stick skillet or cast iron for best results to prevent sticking.
- Adjust the amount of hot honey depending on your preferred level of sweetness and heat.
- Shredded cheeses like cheddar, Monterey Jack, or Mexican cheese blends work well for melting.
- Serve with sour cream, guacamole, or salsa for extra flavor options.
- Leftover quesadillas can be wrapped and stored in the fridge for up to 2 days and reheated in a skillet or oven.
