Ingredients
Scale
Oils and Sauces
- 2 tablespoon Oil or Butter (Avocado oil recommended)
- 1 teaspoon Toasted Sesame Oil
- 2 tablespoon Light Soy Sauce
- 1 tablespoon Oyster Sauce (use vegan if needed)
- 1/2-1 tablespoon Red Chili Sauce (Sambal Oelek recommended)
Noodles
- 8 ounces Thin Spaghetti or Canton Noodles
Vegetables & Aromatics
- 8-10 cloves Garlic, finely diced or minced
- 2 Scallion or Green onion, white and green parts separated, chopped
Other Ingredients
- 1 teaspoon Brown Sugar
- 2 cups Vegetable Broth or Water
- Salt to taste
Instructions
- Heat the Instant Pot: Turn on your Instant Pot and set it to the ‘Saute’ mode to prepare for cooking the aromatics.
- Saute the Aromatics: Add the oil and toasted sesame oil into the Instant Pot. Once hot, add the minced garlic and the white parts of the scallions. Saute them until they are fragrant, which usually takes about 1-2 minutes.
- Prepare the Noodles: Break the spaghetti noodles in half so they fit better in the pot. Arrange them in a zigzag pattern inside the Instant Pot to ensure even cooking.
- Add Sauces and Seasonings: Pour the light soy sauce, oyster sauce, red chili sauce, and sprinkle the brown sugar evenly over the noodles.
- Add Liquid and Cook: Pour the vegetable broth or water over the noodles, making sure they are fully submerged in liquid. Secure the lid and set the Instant Pot to pressure cook on high for 5 minutes.
- Release Pressure and Rest: After cooking, perform a quick release to remove pressure. Open the lid and stir the noodles well. Let the noodles rest for 2 minutes to allow flavors to meld.
- Finish and Serve: Taste the noodles and adjust salt as needed. Garnish with the green parts of the scallions and optionally sprinkle sesame seeds before serving. Enjoy your flavorful garlic noodles!
Notes
- Use vegan oyster sauce if you want to keep the dish vegetarian or vegan-friendly.
- Adjust the amount of red chili sauce to control the spiciness level.
- If you do not have vegetable broth, water can be used but broth adds more flavor.
- Breaking noodles into halves helps them cook more evenly in the Instant Pot.
- Letting the noodles rest after cooking helps thicken the sauce and enhance flavor absorption.
