Italian Nachos combine crispy deep-fried wonton triangles with creamy Alfredo sauce, shredded chicken, mozzarella cheese, bell peppers, and black olives, broiled to melt the cheese for a delicious and unique twist on classic nachos.

For the Wonton Chips
- 1 package wonton wrappers
- Vegetable oil (for frying)

- 2 cups Alfredo sauce
- 2 cups cooked, shredded chicken breast (a rotisserie chicken works great for this)
- 2 cups shredded mozzarella cheese
- 1 red bell pepper, seeded and diced
- 1 can (2 ounces) sliced black olives
- Fresh parsley, chopped (optional)
- 1 teaspoon olive oil
Instructions
- Prepare and fry the wonton wrappers: Heat vegetable oil in a large skillet over medium-high heat. Separate the wonton wrappers and cut each wrapper in half to form triangles. Carefully deep-fry the wonton triangles in batches of four for about 30 to 40 seconds or until they turn light golden. Remove and drain on a paper towel-lined plate. Repeat until all wrappers are fried.
- Cook the bell peppers: In a small skillet, heat 1 teaspoon olive oil over medium-high heat. Add the diced red bell peppers and cook, stirring occasionally, for about 5 minutes or until tender.
- Assemble the nachos: Spread the fried wonton chips evenly on a large baking sheet lined with parchment paper or foil. Drizzle the Alfredo sauce over the chips, then evenly distribute the shredded chicken, 1 cup of mozzarella cheese, cooked bell peppers, and sliced black olives. Finally, sprinkle the remaining mozzarella cheese over the top.
- Broil to melt cheese: Place the baking sheet under a broiler preheated to 450°F (232°C) for 2 to 3 minutes, or until the cheese is melted and bubbly. Watch carefully to avoid burning.
- Serve: Remove from the oven, optionally garnish with chopped fresh parsley, and serve warm to enjoy your Italian Nachos.
