This Jalapeño Popper Sandwich combines the flavors of a classic jalapeño popper appetizer with a hearty sandwich. Creamy, cheesy, and spicy, this sandwich is perfect for a satisfying lunch.

Cheese Filling:
- 4 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons mayonnaise
- 1/4 teaspoon garlic powder
Remaining Ingredients:
- 4 slices thick-cut bread
- 2–3 jalapeños, seeded and thinly sliced
- 4 slices cooked bacon
- 2 tablespoons butter, softened
Instructions
- Prepare Cheese Filling: In a small bowl, mix together the softened cream cheese, cheddar cheese, mozzarella cheese, mayonnaise, and garlic powder until well combined.
- Assemble Sandwiches: Spread the cheese mixture evenly onto two slices of bread. Layer the sliced jalapeños and cooked bacon over the cheese mixture, then top with the remaining bread slices to form sandwiches.
- Cook Sandwiches: Butter the outside of each slice of bread. Heat a skillet over medium heat and cook the sandwiches for 3–4 minutes per side, or until golden brown and the cheese is melted. Slice and serve warm.
Notes
- For extra heat, leave the seeds in the jalapeños or add a dash of hot sauce to the cheese mixture.
- You can also grill the sandwich on a panini press for an extra crispy crust.
