Description

This Lazy Day Creamy Chicken & Rice Dinner Casserole is a comforting, easy-to-make one-dish meal perfect for busy weeknights. Tender chicken breasts bake atop a creamy mixture of rice and savory soups, all seasoned with Lipton Onion Soup Mix for a deliciously flavorful dinner that the whole family will love.

Ingredients

Scale

Chicken

  • 1½ pounds boneless skinless chicken breasts

Rice and Soup Mixture

  • 2 cups Minute Rice (white or brown)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can water (use empty soup can to measure)
  • 1 envelope Lipton Onion Soup Mix (approx. 1 oz)
  • 1 tbsp butter (for greasing the baking dish)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly with butter to prevent sticking and add richness to the dish.
  2. Mix Rice and Soups: In a large bowl, combine the 2 cups of Minute Rice, cream of mushroom soup, cream of chicken soup, and one can of water (measured using the empty soup can). Stir until well blended into a creamy mixture.
  3. Assemble in Baking Dish: Pour the rice and soup mixture evenly into the greased baking dish, spreading it out smoothly.
  4. Add Chicken: Place the boneless skinless chicken breasts on top of the rice mixture. Ensure they are evenly spaced.
  5. Season with Onion Soup Mix: Sprinkle the entire envelope of Lipton Onion Soup Mix evenly over the chicken breasts, adding a flavorful crust and seasoning.
  6. Cover and Bake: Cover the entire baking dish tightly with aluminum foil to lock in moisture and steam the chicken.
  7. Bake Until Done: Bake in the preheated oven for 1 to 1½ hours. Check to ensure the chicken is fully cooked through (internal temperature should reach 165°F / 74°C) and the rice is tender and creamy.

Notes

  • For best results, use Minute Rice for a quick-cooking texture consistent with the recipe.
  • You can substitute brown rice for a healthier, more fiber-rich option, though cooking time may slightly vary.
  • If you prefer, add a little shredded cheese on top during the last 10 minutes of baking for a cheesy crust.
  • Consider adding vegetables such as frozen peas or chopped carrots into the rice mixture for added nutrition and color.
  • Leftovers keep well for 3-4 days refrigerated and reheat nicely in the microwave.
