Description

These Lemon Pepper Chicken Skewers are a quick and flavorful meal perfect for any day of the week. Marinated in a zesty lemon and pepper blend, then air-fried to juicy perfection, they’re tender on the inside with a crispy exterior. Garnished with fresh parsley, they make a delightful appetizer or main dish that’s both healthy and delicious.

Ingredients

Scale

Chicken Marinade

  • 500 grams (1 lb) chicken breast, cut into 1-inch cubes
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon lemon zest, grated from about 1 lemon
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • Salt to taste

Garnish and Extras

  • Fresh parsley, chopped
  • Skewers, wooden or metal
  • Optional: Bell peppers or cherry tomatoes for threading onto skewers

Instructions

  1. Marinate the Chicken: In a bowl, combine lemon juice, lemon zest, black pepper, garlic powder, olive oil, and salt. Add the chicken cubes and toss well to fully coat them in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors infuse.
  2. Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece to ensure even cooking. If desired, alternate with vegetables such as bell peppers or cherry tomatoes for added color and flavor.
  3. Preheat the Air Fryer: Set the air fryer to 200°C (400°F) and let it preheat for about 5 minutes to optimize cooking.
  4. Air Fry the Skewers: Place the assembled skewers in a single layer in the air fryer basket. Cook for 10 to 12 minutes, flipping the skewers halfway through to ensure even browning and cooking of the chicken.
  5. Serve: Once cooked through and nicely browned, carefully remove the skewers from the air fryer. Garnish with freshly chopped parsley and serve immediately with your choice of dipping sauce or a fresh salad on the side.

Notes

  • Ensure the chicken pieces are cut evenly to promote uniform cooking.
  • Marinating for longer than 30 minutes (up to 2 hours) will enhance the flavors even more.
  • Wooden skewers should be soaked in water for at least 30 minutes before use to prevent burning.
  • Monitor the air fryer during cooking times as appliances may vary; adjust time if chicken isn’t fully cooked.
  • Customize by adding vegetables or swapping chicken breast for thigh meat for juicier results.
