Pasta:
- 12 ounces pasta (such as penne, rigatoni, or spaghetti)
Sauce:
- 1 tablespoon olive oil
- 3 cloves garlic (minced)
- 5 ounces fresh baby spinach
- 1 cup ricotta cheese
- zest and juice of 1 lemon
- 1/2 cup grated Parmesan cheese
- 1/4 cup reserved pasta water
- salt and black pepper to taste
- red pepper flakes (optional)
- fresh basil or parsley for garnish (optional)
Instructions
- Cook the Pasta: Boil salted water, cook pasta until al dente, then drain, reserving pasta water.
- Prepare the Sauce: Sauté garlic in olive oil, add spinach, then stir in ricotta, lemon zest, lemon juice, and Parmesan. Thin with pasta water.
- Combine and Serve: Toss cooked pasta in the sauce until well coated and heated through. Garnish with herbs.

- Use whole milk ricotta for a richer sauce.
