Description

These Lentil Tacos are a delicious and satisfying vegan alternative to traditional meat tacos. Flavorful lentils seasoned with spices and lime juice are wrapped in warm tortillas and topped with your favorite taco fixings for a tasty meal.

Lentil Filling:

  • 1 cup dried brown or green lentils (rinsed)
  • 2 ½ cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • juice of ½ lime

Additional Ingredients:

  • 8 small corn or flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, avocado, salsa, shredded cheese, sour cream

Instructions

  1. Cook Lentils: In a medium saucepan, combine lentils and vegetable broth. Simmer until tender and liquid is absorbed.
  2. Sauté Onion: In a skillet, sauté onion in olive oil until softened. Add garlic and tomato paste.
  3. Season Lentils: Add cooked lentils to skillet with spices. Cook and stir well.
  4. Finish and Serve: Stir in lime juice. Fill tortillas with lentil mixture, add desired toppings, and serve.

Notes

  • You can make the lentil filling ahead and store it in the fridge for up to 4 days.
  • Use red lentils for a softer texture, or add a chopped chipotle pepper for extra spice.
