These Lentil Tacos are a delicious and satisfying vegan alternative to traditional meat tacos. Flavorful lentils seasoned with spices and lime juice are wrapped in warm tortillas and topped with your favorite taco fixings for a tasty meal.

Lentil Filling:
- 1 cup dried brown or green lentils (rinsed)
- 2 ½ cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 tablespoon tomato paste
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- juice of ½ lime
Additional Ingredients:
- 8 small corn or flour tortillas
- Optional toppings: shredded lettuce, diced tomatoes, avocado, salsa, shredded cheese, sour cream
Instructions
- Cook Lentils: In a medium saucepan, combine lentils and vegetable broth. Simmer until tender and liquid is absorbed.
- Sauté Onion: In a skillet, sauté onion in olive oil until softened. Add garlic and tomato paste.
- Season Lentils: Add cooked lentils to skillet with spices. Cook and stir well.
- Finish and Serve: Stir in lime juice. Fill tortillas with lentil mixture, add desired toppings, and serve.
Notes
- You can make the lentil filling ahead and store it in the fridge for up to 4 days.
- Use red lentils for a softer texture, or add a chopped chipotle pepper for extra spice.
