Description

Louisiana Voodoo Fries are a flavorful and crispy oven-roasted potato dish seasoned with bold Cajun spices and topped with a spicy sour cream sauce, green onions, and optional crumbled feta cheese. Perfect as a snack or side, these fries offer a tasty twist on classic French fries with a Southern kick.

Ingredients

Scale

Fries

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1/2 cup chopped green onions
  • 1/4 cup crumbled feta cheese (optional)

Spicy Sauce

  • 1/2 cup sour cream
  • 2 tablespoons hot sauce
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to ensure it’s fully heated for roasting the fries.
  2. Prepare the potatoes: Wash and peel the russet potatoes, then cut them into even strips to ensure uniform cooking.
  3. Coat the fries with oil: Place the potato strips in a large bowl, drizzle with olive oil, and toss until all pieces are evenly coated.
  4. Season the fries: Sprinkle the Cajun seasoning generously over the potato strips and mix well to evenly distribute the spices.
  5. Roast the fries: Spread the fries out in a single layer on a baking sheet to allow for even cooking. Roast in the preheated oven for 30 to 35 minutes, flipping them halfway through cooking, until they are golden brown and crispy.
  6. Prepare the spicy sauce: While the fries are roasting, mix together the sour cream, hot sauce, and lemon juice in a small bowl until smooth and well combined.
  7. Finish and serve: Once the fries are done, remove from the oven and transfer to a serving dish. Top them with chopped green onions and, if desired, crumbled feta cheese. Serve immediately with the spicy sour cream sauce on the side or drizzled over the fries.

Notes

  • Use russet potatoes for a crispy texture; other potato varieties may not crisp up as well.
  • Adjust the amount of Cajun seasoning and hot sauce to your preferred spice level.
  • Feta cheese is optional but adds a nice tangy contrast to the spicy flavors.
  • Be sure to flip the fries halfway through roasting for even browning and crispiness.
  • For extra crispiness, soak cut potatoes in cold water for 30 minutes before baking and pat dry thoroughly.
  • Serve immediately for best texture; fries may lose crispiness if left to sit.
