Ingredients
Scale
Salmon and Marinade
- 2 fillets Salmon (Wild-caught preferred)
- 2 tablespoons Olive Oil (Avocado oil is an excellent substitute)
- 3 cloves Garlic (Minced) (Fresh preferred)
- 2 tablespoons Lemon Juice (Freshly squeezed preferred)
- 1 teaspoon Salt (Sea salt or kosher salt)
- 1 teaspoon Black Pepper (Freshly cracked)
- 2 tablespoons Fresh Dill (Dried dill or parsley are acceptable substitutes)
Vegetables
- 1 cup Asparagus (Roast with salmon)
- 1 cup Bell Peppers (Roast with salmon)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the salmon and vegetables.
- Prepare Marinade: In a small bowl, whisk together olive oil, minced garlic, freshly squeezed lemon juice, salt, and freshly cracked black pepper. Let the mixture sit for about 5 minutes to blend the flavors.
- Arrange Salmon: Line a baking sheet and place the salmon fillets skin-side down on it.
- Apply Marinade: Brush the prepared marinade evenly over each salmon fillet, ensuring good coverage. Sprinkle fresh dill on top of the salmon for added aroma and flavor.
- Roast Vegetables: Arrange the asparagus and bell peppers around the salmon on the baking sheet so they can roast simultaneously.
- Bake: Bake everything in the preheated oven for 15-20 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Rest & Serve: Remove the salmon from the oven and let it rest for a few minutes before serving with the roasted vegetable sides for a complete meal.
Notes
- Wild-caught salmon is preferred for better flavor and sustainability.
- You can substitute avocado oil for olive oil if preferred.
- Fresh garlic and lemon juice enhance the freshness of the marinade.
- Use a meat thermometer to ensure the salmon is cooked to a safe internal temperature.
- Leftover salmon can be refrigerated and enjoyed cold or reheated gently.
