For the Meatballs:
- 1 pound ground chicken
- 1/3 cup breadcrumbs
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped sun-dried tomatoes
- 2 tablespoons finely chopped red onion
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
Instructions
- Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Prepare the meatball mixture: In a large bowl, combine ground chicken, breadcrumbs, feta, sun-dried tomatoes, red onion, parsley, oregano, garlic, egg, salt, and pepper. Mix gently until just combined.
- Form the meatballs: Use a cookie scoop or your hands to form the mixture into 16–18 meatballs. Place on the prepared baking sheet.
- Bake the meatballs: Lightly brush or drizzle the tops with olive oil. Bake for 18–20 minutes, or until golden and cooked through (internal temperature should reach 165°F).
- Serve: Let cool slightly before serving.

- Serve with tzatziki, hummus, pita, or over a Greek salad.
- For a low-carb version, use almond flour instead of breadcrumbs.
