Chicken Patties:

  • ½ cup crumbled feta cheese
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped sun-dried tomatoes (in oil)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg
  • ¼ cup breadcrumbs (regular or gluten-free)

For Cooking:

  • 1 tablespoon olive oil

Instructions

  1. Mix Ingredients: In a large bowl, combine the ground chicken, feta, red onion, parsley, sun-dried tomatoes, garlic, oregano, salt, pepper, egg, and breadcrumbs. Mix until just combined—do not overmix.
  2. Shape Patties: Shape the mixture into 6 equal-sized patties.
  3. Cook Patties: Heat olive oil in a skillet over medium heat. Cook the patties for 4–5 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
  4. Rest and Serve: Let rest for a few minutes before serving.
