Description

This Mediterranean-Inspired Wonton Soup combines the flavors of the Mediterranean with a comforting wonton soup. Filled with a savory mixture of ground chicken, feta cheese, and sun-dried tomatoes, these wontons are simmered in a flavorful chicken broth with spinach and a hint of lemon.

For the Wontons:

  • 1/2 pound ground chicken or turkey
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons finely chopped sun-dried tomatoes
  • 2 tablespoons chopped fresh parsley
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 square wonton wrappers

For the Soup:

  • 6 cups low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1/2 small red onion, thinly sliced
  • 2 cups fresh spinach
  • Juice of 1/2 lemon
  • Optional garnish: extra feta, chopped fresh dill

Instructions

  1. Prepare the Wonton Filling: In a bowl, combine the ground meat, feta, sun-dried tomatoes, parsley, garlic, oregano, salt, and pepper.
  2. Fill and Shape Wontons: Place a teaspoon of filling in each wonton wrapper, moisten edges, fold into triangles, and seal tightly.
  3. Cook the Soup: Sauté onion, add chicken broth, bring to a boil, add wontons, simmer until cooked. Stir in spinach and lemon juice until wilted.
  4. Serve: Ladle soup into bowls, garnish with feta and dill if desired. Serve warm.
