For the Wontons:
- 1/2 pound ground chicken or turkey
- 1/4 cup crumbled feta cheese
- 2 tablespoons finely chopped sun-dried tomatoes
- 2 tablespoons chopped fresh parsley

- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 24 square wonton wrappers
For the Soup:
- 6 cups low-sodium chicken broth
- 1 tablespoon olive oil
- 1/2 small red onion, thinly sliced
- 2 cups fresh spinach
- Juice of 1/2 lemon
- Optional garnish: extra feta, chopped fresh dill
Instructions
- Prepare the Wonton Filling: In a bowl, combine the ground meat, feta, sun-dried tomatoes, parsley, garlic, oregano, salt, and pepper.
- Fill and Shape Wontons: Place a teaspoon of filling in each wonton wrapper, moisten edges, fold into triangles, and seal tightly.
- Cook the Soup: Sauté onion, add chicken broth, bring to a boil, add wontons, simmer until cooked. Stir in spinach and lemon juice until wilted.
- Serve: Ladle soup into bowls, garnish with feta and dill if desired. Serve warm.
Notes
- Keep wonton wrappers covered with a damp towel to prevent drying out.
- Assembled wontons can be frozen and cooked from frozen with added cook time.
