Description

These Mediterranean Salmon Patties are flavorful and easy to make. Packed with salmon, feta cheese, and sun-dried tomatoes, these patties are crispy on the outside and moist on the inside. Perfect for a quick and healthy dinner option.

Salmon Patties:

  • 2 (5-ounce) cans of salmon (drained, skin and bones removed)
  • 1/2 cup breadcrumbs
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon capers (chopped)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs (lightly beaten)
  • 2 tablespoons olive oil (for frying)

For Serving:

  • lemon wedges

Instructions

  1. Mix Ingredients: In a large bowl, combine salmon, breadcrumbs, red onion, sun-dried tomatoes, feta cheese, parsley, capers, oregano, salt, and pepper. Add beaten eggs and mix until well combined.
  2. Form Patties: Shape mixture into 6-8 patties.
  3. Cook Patties: Heat olive oil in a skillet, cook patties for 3-4 minutes per side until golden brown and heated through.
  4. Serve: Drain on paper towels and serve warm with lemon wedges.

Notes

  • For a lower-carb version, use almond flour instead of breadcrumbs.
