- 2 (5-ounce) cans of salmon (drained, skin and bones removed)
- 1/2 cup breadcrumbs
- 1/4 cup red onion (finely chopped)
- 1/4 cup sun-dried tomatoes (chopped)
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon capers (chopped)
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs (lightly beaten)
- 2 tablespoons olive oil (for frying)
For Serving:

Instructions
- Mix Ingredients: In a large bowl, combine salmon, breadcrumbs, red onion, sun-dried tomatoes, feta cheese, parsley, capers, oregano, salt, and pepper. Add beaten eggs and mix until well combined.
- Form Patties: Shape mixture into 6-8 patties.
- Cook Patties: Heat olive oil in a skillet, cook patties for 3-4 minutes per side until golden brown and heated through.
- Serve: Drain on paper towels and serve warm with lemon wedges.
Notes
- For a lower-carb version, use almond flour instead of breadcrumbs.
