Ingredients
Scale
For the Dough and Filling
- 4 tbsp all-purpose flour
- ¼ tsp baking powder
- Pinch of fine sea salt
- 1½ tbsp water
- 1 tbsp brown sugar or coconut sugar
- ½ tsp ground cinnamon
- A tiny dab of oil for greasing the mug
For the Icing
- 2 tbsp powdered sugar
- ½ tsp plant-based milk or water
Instructions
- Prepare the Icing: In a small bowl, combine powdered sugar with plant-based milk or water and mix until smooth and drippy. Set aside for later use.
- Grease the Mug: Lightly grease an 11–12 oz microwave-safe mug with a tiny dab of oil to prevent sticking during cooking.
- Make the Dough: In a separate bowl, mix together the all-purpose flour, baking powder, and salt. Gradually add 1½ tablespoons of water and stir until a slightly tacky dough forms. Knead the dough a few times until cohesive.
- Roll It Out: Lightly flour a clean surface and roll the dough into a strip roughly 4 inches wide and about â…› inch thick, preparing it for filling.
- Add Filling: Evenly sprinkle brown sugar (or coconut sugar) and ground cinnamon over the rolled-out dough. Fold the edges inward carefully to seal the cinnamon sugar inside.
- Shape & Microwave: Roll the folded dough into a spiral shape and place it inside the greased mug. Pour ½ teaspoon of water over the dough to create steam during cooking. Microwave on full power for approximately 50 seconds, adjusting time as needed based on your microwave’s strength.
- Serve: Carefully turn the cooked cinnamon roll out onto a plate. Drizzle the prepared icing over the top and enjoy immediately while warm.
Notes
- Use a microwave-safe mug of 11–12 oz capacity for best results.
- If the dough feels too sticky, add a touch more flour when kneading.
- Adjust microwave time based on your appliance’s wattage; microwaving too long can dry out the roll.
- Substitute plant-based milk with water for the icing to keep it vegan.
- Enjoy immediately, as the cinnamon roll is best warm and fresh.
