Oat Mixture:
- 2 cups old-fashioned rolled oats
- 1/2 cup chopped nuts (walnuts, pecans, or almonds)
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
Berry Layer:
- 2 cups mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)
Liquid Mixture:
- 2 cups unsweetened almond milk (or other plant-based milk)
- 1/4 cup pure maple syrup
- 2 large eggs (or flax eggs for vegan)
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil or butter (melted)
Topping:
- Additional berries and nuts for topping (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
- Combine oats, nuts, baking powder, cinnamon, and salt in a large bowl.
- Layer half of the oat mixture and berries in the baking dish.
- Repeat with remaining oats and berries.
- Whisk together almond milk, maple syrup, eggs, vanilla, and melted coconut oil.
- Pour the liquid mixture over oats and berries.
- Bake for 35-40 minutes until set and golden.
- Cool for 5 minutes before serving. Enjoy warm.
Notes
- For a sweeter bake, increase maple syrup to 1/3 cup.
- You can use frozen berries without thawing—bake a few extra minutes if needed.
- Leftovers can be stored in the fridge for up to 4 days and reheated as needed.
