  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt

Berry Layer:

  • 2 cups mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)

Liquid Mixture:

  • 2 cups unsweetened almond milk (or other plant-based milk)
  • 1/4 cup pure maple syrup
  • 2 large eggs (or flax eggs for vegan)
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil or butter (melted)

Topping:

  • Additional berries and nuts for topping (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Combine oats, nuts, baking powder, cinnamon, and salt in a large bowl.
  3. Layer half of the oat mixture and berries in the baking dish.
  4. Repeat with remaining oats and berries.
  5. Whisk together almond milk, maple syrup, eggs, vanilla, and melted coconut oil.
  6. Pour the liquid mixture over oats and berries.
  7. Bake for 35-40 minutes until set and golden.
  8. Cool for 5 minutes before serving. Enjoy warm.

Notes

  • For a sweeter bake, increase maple syrup to 1/3 cup.
  • You can use frozen berries without thawing—bake a few extra minutes if needed.
