  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces

For the Crust:

  • 1 package refrigerated double pie crusts (or homemade)
  • 1 egg, beaten
  • 1 tablespoon coarse sugar for sprinkling

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Crust: Roll out one pie crust and fit it into a 9-inch pie dish.
  3. Make the Filling: Toss strawberries, blueberries, raspberries, sugar, cornstarch, lemon juice, lemon zest, cinnamon, and salt. Pour into crust and dot with butter.
  4. Add the Top Crust: Place the second crust over the filling or create a lattice top.
  5. Bake: Brush with egg, sprinkle sugar, and bake for 45-50 minutes until golden.
