Description

This refreshing and creamy No-Churn Lime Ice Cream is a vegan delight that combines the tangy brightness of lime curd with the smooth richness of coconut cream. Perfect for a quick homemade dessert without the need for an ice cream maker, this recipe uses simple ingredients to create a luscious frozen treat ideal for warm days or anytime you crave a zesty sweet snack.

Ingredients

Scale

Lime Curd

  • Half batch (240g) vegan lime curd (prepare up to 2 days ahead and refrigerate)

Ice Cream Base

  • 320 g vegan condensed milk
  • 2 tablespoons fresh lime zest
  • 1 tablespoon vodka (optional, helps improve texture and reduce iciness)

Cream

  • 400 ml coconut whipping cream

Instructions

  1. Preparation: Make the vegan lime curd up to two days in advance and store it refrigerated until you’re ready to use it in the recipe.
  2. Make the base: In a mixing bowl, combine 200g of the prepared lime curd, vegan condensed milk, fresh lime zest, and vodka if using. Beat with an electric mixer until the ingredients are fully incorporated and smooth.
  3. Whip cream: In a separate large bowl, whip the coconut whipping cream until it becomes light, fluffy, and airy, which will help give the ice cream a creamy texture.
  4. Combine: Gradually fold the lime curd mixture into the whipped coconut cream in two parts, gently whipping or folding each time to blend but without deflating the cream.
  5. Freeze: Pour the combined mixture into a loaf pan, cover it tightly with plastic wrap, and place it in the freezer. Allow it to freeze completely for at least 5 hours, or until it is fully set.
  6. Serving: Remove the ice cream from the freezer about 15 minutes before serving to let it soften slightly for easier scooping. Top each serving with the remaining lime curd for extra flavor.

Notes

  • Using vodka is optional but helps keep the ice cream soft and reduces ice crystallization.
  • The lime curd can be prepared ahead of time to streamline the recipe.
  • Be sure to whip the coconut cream well for a fluffy texture that mimics traditional dairy ice cream.
  • Allow thawing time before scooping to improve texture and ease serving.
  • For best results, use a high-quality coconut whipping cream designed for whipping.
