Description

These Oatmeal Raisin Cookie Bars are a delicious twist on classic oatmeal cookies, baked into chewy bars loaded with oats and sweet raisins. Perfect for a quick and easy dessert or snack.

Ingredients

Scale

For the Cookie Bars:

  • 1 cup unsalted butter (softened)
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Instructions

  1. Preheat the oven and prepare the pan: Preheat the oven to 350°F. Grease or line a 9×13-inch baking pan with parchment paper.
  2. Mix the wet ingredients: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla extract, mixing well.
  3. Combine the dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  4. Add oats and raisins: Stir in the oats and raisins until evenly distributed.
  5. Bake: Spread the dough evenly in the prepared pan. Bake for 25 to 30 minutes until golden brown and a toothpick inserted in the center comes out clean.
  6. Cool and cut: Allow the bars to cool completely before cutting into bars.

Notes

  • For softer bars, slightly underbake and allow them to finish setting as they cool.
  • You can substitute raisins with chocolate chips or dried cranberries for a variation.
  • Store in an airtight container at room temperature for up to 5 days.
