For the Cajun Chicken:
- 1 pound boneless skinless chicken breast, sliced into thin strips
- 2 tablespoons Cajun seasoning, divided
- 2 tablespoons olive oil
For the Alfredo Pasta:
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 12 ounces fettuccine pasta, uncooked
- 1 cup grated Parmesan cheese
- 1 tablespoon butter
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Season the chicken: Season chicken strips with 1 tablespoon of Cajun seasoning.
- Cook the chicken: In a large skillet, cook chicken in olive oil until browned and cooked through. Remove and set aside.
- Prepare the sauce: In the same pan, sauté garlic, then add broth, cream, and fettuccine. Simmer until pasta is tender.
- Finish the dish: Stir in butter, Parmesan, and remaining Cajun seasoning. Add chicken back to the pan, heat through. Garnish with parsley.
