Ingredients
Italian Chicken Sausage:
1 pound spicy Italian chicken sausage (casings removed)
Pasta:
1 pound short pasta (penne, rigatoni, or orecchiette)
Asparagus:
1 bunch asparagus (trimmed and cut into 2-inch pieces)
Other Ingredients:
3 cloves garlic (minced), zest and juice of 1 lemon, 1 cup fresh basil leaves (chopped), 2 tablespoons fresh chives (chopped), 1/2 cup green olives (chopped), 1/4 cup plus 2 tablespoons extra-virgin olive oil, 2 tablespoons apple cider vinegar, 1/4 cup dry white wine, 3/4 cup grated Parmesan cheese (plus extra for serving), 1/4–1/2 teaspoon crushed red pepper flakes, kosher salt and black pepper to taste
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente; reserve 1/2 cup cooking water and drain.
- Prepare Herb Mixture: In a small bowl, whisk together 1/4 cup olive oil, apple cider vinegar, lemon zest, lemon juice, basil, chives, olives, salt, and pepper; set aside.
- Cook Sausage and Asparagus: In the same pot, heat remaining 2 tablespoons olive oil over medium-high heat. Add sausage and cook until browned. Stir in asparagus, garlic, and red pepper flakes; cook until asparagus is tender-crisp.
- Combine Ingredients: Deglaze with white wine, then add back the pasta with reserved cooking water, Parmesan, and herb mixture. Toss until evenly coated.
