Instructions

  1. Prepare the onion mixture: Place the thinly sliced onions in a large bowl and gently separate the strands using your hands to avoid clumping. Add the chickpea flour, rice flour, salt, ground cumin, ground coriander, turmeric, chili powder, garam masala, chopped green chili if using, chopped cilantro, and baking powder. Mix everything thoroughly so the onions are well coated with the dry ingredients.
  2. Form the batter: Gradually pour water into the mixture a little at a time while mixing, until a thick batter forms that sticks well to the onions. The batter should be moist enough to hold together but not too runny.
  3. Heat the oil: In a deep pan, heat about 2 inches of vegetable oil over medium-high heat until it reaches approximately 350°F (175°C). Maintaining this temperature is key to achieving crispy bhajis without absorbing excess oil.
  4. Fry the bhajis: Carefully drop small handfuls of the onion mixture into the hot oil, gently pressing and shaping them into loose clusters. Fry the bhajis for about 3 to 4 minutes, turning occasionally to ensure they become evenly golden and crispy on all sides.
