Ingredients
Scale
Chicken Mixture
- 2 cups cooked shredded chicken
- 1 tablespoon olive oil
- 1/4 cup honey
- Juice of 2 limes
- 1 teaspoon lime zest
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Tacos
- 12 small flour tortillas
- 1 1/2 cups shredded Mexican blend cheese
Toppings and Serving
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream for serving
Instructions
- Preheat Oven: Preheat your oven to 375 degrees F (190 degrees C) to prepare for baking the tacos.
- Make Honey Lime Sauce: In a medium bowl, whisk together honey, lime juice, lime zest, olive oil, chili powder, cumin, garlic powder, paprika, salt, and black pepper until well blended.
- Coat Chicken: Add the shredded cooked chicken to the bowl and mix thoroughly until the chicken is evenly coated with the honey lime sauce.
- Assemble Tacos: Lay the flour tortillas flat on a clean surface. Spoon an even amount of the honey lime chicken mixture into the center of each tortilla, then sprinkle shredded Mexican blend cheese over the chicken. Fold each tortilla in half to form tacos.
- Arrange in Baking Dish: Lightly grease a baking dish and stand the tacos upright in the dish, placing them close enough so they support each other but not overcrowded.
- Bake Tacos: Place the baking dish in the oven and bake for 15 to 18 minutes, or until the tortillas are lightly crispy and the cheese has melted.
- Add Toppings: Remove the tacos from the oven and top each with shredded lettuce, diced tomatoes, and chopped cilantro.
- Serve: Serve the tacos warm with a dollop of sour cream on the side, and optionally add sliced avocado or chipotle sauce for extra flavor.
Notes
- Rotisserie chicken is a great time-saving option for this recipe.
- Substitute corn tortillas for a gluten-free version of these tacos.
- Adding sliced avocado or a drizzle of chipotle sauce enhances the flavor if desired.
