- 3–4 pounds chuck roast
- 2 tablespoons olive oil
- Salt and black pepper to taste
Vegetables:
- 1 large onion, sliced
- 4 garlic cloves, minced
- 4 carrots, peeled and cut into chunks
- 4 celery stalks, chopped
- 1 pound baby potatoes or halved Yukon Gold potatoes
Seasonings and Broth:
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
Instructions
- Preheat the Oven: Preheat the oven to 300°F.
- Sear the Roast: Pat the chuck roast dry, season with salt and pepper, and sear in a Dutch oven. Remove and set aside.
- Cook Vegetables: Cook onions, garlic, and tomato paste. Add carrots, celery, and potatoes.
- Add Roast and Broth: Place the roast on the vegetables, pour in Worcestershire sauce and beef broth. Add thyme, rosemary, and bay leaf.
- Cook: Cover and cook in the oven for 3–3.5 hours until tender.
- Serve: Remove bay leaf before serving. Serve with vegetables and pan juices.

- For a thicker gravy, simmer the liquid with a cornstarch slurry.
