Main Ingredients:

  • 3–4 pounds chuck roast
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Vegetables:

  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 4 carrots, peeled and cut into chunks
  • 4 celery stalks, chopped
  • 1 pound baby potatoes or halved Yukon Gold potatoes

Seasonings and Broth:

  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf

Instructions

  1. Preheat the Oven: Preheat the oven to 300°F.
  2. Sear the Roast: Pat the chuck roast dry, season with salt and pepper, and sear in a Dutch oven. Remove and set aside.
  3. Cook Vegetables: Cook onions, garlic, and tomato paste. Add carrots, celery, and potatoes.
  4. Add Roast and Broth: Place the roast on the vegetables, pour in Worcestershire sauce and beef broth. Add thyme, rosemary, and bay leaf.
  5. Cook: Cover and cook in the oven for 3–3.5 hours until tender.
  6. Serve: Remove bay leaf before serving. Serve with vegetables and pan juices.
