For the Brigadeiros:

- 2 tablespoons unsalted butter
- 1/2 cup finely ground pistachios
- 1/4 cup white chocolate chips
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup finely chopped pistachios for rolling
Instructions
- Cook the Brigadeiros: In a medium nonstick saucepan, combine sweetened condensed milk, butter, ground pistachios, white chocolate chips, vanilla extract, and salt. Cook over medium-low heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan, about 8–10 minutes.
- Cool and Shape: Transfer the mixture to a greased plate or shallow dish and let it cool to room temperature. With buttered hands, scoop teaspoon-sized portions and roll into balls.
- Coat the Brigadeiros: Roll each ball in chopped pistachios to coat. Optionally, place them in mini paper cups for serving.
- Storage: Store the brigadeiros in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 1 week.
Notes
- For a smoother texture, sift the ground pistachios before cooking.
- Alternatively, roll the brigadeiros in a mixture of powdered sugar and pistachios for a sweeter finish.
