Description

  • 1 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1/4 teaspoon salt
  • 1/2 cup vanilla or chocolate protein powder
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1/3 cup dark chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large mixing bowl, combine the peanut butter, honey, eggs, and vanilla extract. Stir until smooth.
  3. Add dry ingredients: Add in the protein powder, rolled oats, almond flour, baking soda, and salt. Mix until fully combined.
  4. Include optional ingredients: Fold in the chocolate chips or nuts if using.
  5. Bake cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flatten slightly, and bake for 8–10 minutes until lightly golden.
  6. Cool and serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
