Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
- Cream butter and sugar: In a large bowl, cream together the butter and sugar until light and fluffy.
- Combine wet and dry ingredients: Add the egg and vanilla, mixing well. Alternate adding the dry ingredients and buttermilk, mixing until just combined. Gently fold in the chopped rhubarb.
- Prepare batter: Pour the batter into the prepared baking dish and spread evenly.
- Make streusel topping: Combine brown sugar, flour, and cinnamon in a small bowl. Cut in the cold butter until crumbly. Sprinkle the streusel evenly over the batter.
- Bake: Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
- Prepare vanilla sauce: In a small saucepan, whisk together the sugar and cornstarch. Stir in the milk and cook until thickened. Remove from heat and stir in the butter and vanilla extract.
