Instructions
- Preheat the Oven: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Squash: In a large bowl, toss the sliced squash with olive oil, garlic powder, thyme, smoked paprika (if using), salt, and pepper until evenly coated.
- Roast the Squash: Spread the squash in a single layer on the prepared baking sheet. Roast for 20–25 minutes, flipping halfway through, until golden and tender.
- Add Cheese and Garnish: If using Parmesan cheese, sprinkle it over the squash during the last 5 minutes of roasting. Garnish with fresh parsley before serving.
