For the salmon patties:

  • 1 pound skinless salmon fillet, cut into chunks
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 green onions, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the basil mayo:

  • 1/2 cup mayonnaise
  • 1/4 cup fresh basil leaves
  • 1 teaspoon lemon juice
  • 1 small garlic clove

For serving:

  • 4 burger buns
  • Lettuce leaves

Instructions

  1. Prepare the salmon patties: Pulse salmon in a food processor, mix with breadcrumbs, egg, green onions, Dijon mustard, lemon juice, salt, and pepper.
  2. Shape and chill: Form into 4 patties, refrigerate for 15 minutes.
