- 1 pound ground beef or ground lamb
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1/2 cup frozen peas
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 4 cups beef broth
For the Mashed Potato Topping:
- 1 1/2 cups russet potatoes, peeled and diced
- 1/2 cup heavy cream
- 2 tablespoons butter
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook the Meat: In a large pot, heat olive oil and brown the ground beef or lamb. Add onion, carrots, celery, and garlic. Cook until tender.
- Add Flavors: Stir in tomato paste, Worcestershire sauce, thyme, and rosemary.
- Cook the Soup: Add diced potatoes and beef broth. Simmer until potatoes are soft. Add peas, cream, and butter. Season to taste.

- For a thicker consistency, gently mash some of the potatoes before adding the cream.
