  • 2 medium carrots, peeled and diced

  • 1/2 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 4 cups beef broth

For the Mashed Potato Topping:

  • 1 1/2 cups russet potatoes, peeled and diced
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Meat: In a large pot, heat olive oil and brown the ground beef or lamb. Add onion, carrots, celery, and garlic. Cook until tender.
  2. Add Flavors: Stir in tomato paste, Worcestershire sauce, thyme, and rosemary.
  3. Cook the Soup: Add diced potatoes and beef broth. Simmer until potatoes are soft. Add peas, cream, and butter. Season to taste.
