  • 3 cloves garlic (minced)
  • 1-inch piece fresh ginger (grated)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch (mixed with 1 tbsp water)
  • 1/4 tsp red pepper flakes (optional)
  • 2 green onions (sliced, for garnish)
  • 1 tbsp sesame seeds (optional, for garnish)

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, and cornstarch slurry. Set aside.
  2. Cook the Shrimp: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2–3 minutes until just pink and cooked through. Remove from pan and set aside.
  3. Stir-Fry Veggies: Add the remaining tablespoon of oil to the pan, then sauté garlic and ginger. Add asparagus and cook for 2–3 minutes, then add mushrooms and cook for another 2–3 minutes until tender.
  4. Combine Ingredients: Return the shrimp to the pan and pour in the sauce. Toss everything together and stir-fry for another 1–2 minutes until the sauce thickens and coats the ingredients.
