- 6 tablespoons honey or maple syrup
- 1 teaspoon lime zest (from one lime)
- 3 tablespoons fresh lime juice (from 1 1/2 to 2 limes)
- 4 garlic cloves, minced or grated (or 1/2 teaspoon garlic powder)
- 1 1/2 tablespoons grated fresh ginger
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons Sriracha sauce
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoon cornstarch (optional, for thickening)

Instructions
- Make Marinade/Sauce: Whisk or blend together the soy sauce, honey or maple syrup, lime zest, lime juice, minced garlic, grated ginger, vegetable oil, Sriracha sauce, and kosher salt until fully combined.
- Marinate Chicken: Place the chicken pieces in a bowl or zip-top bag and pour half of the marinade over them. Toss to coat well. Let marinate for 30 minutes at room temperature or refrigerate for 6 to 12 hours to allow flavors to penetrate.
- Prepare Glaze (Optional): Take the reserved half of the marinade and, if desired, whisk in 1/2 teaspoon cornstarch. Heat this mixture gently to thicken it into a glaze for basting during grilling.
- Prepare Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking. Thread the marinated chicken pieces onto skewers, ensuring they are evenly spaced.
- Grill Chicken Skewers: Place the skewers on the hot grill. Grill the chicken until it turns golden brown and is cooked through, about 10–15 minutes, turning occasionally. While grilling, baste the chicken with the prepared glaze to build up a shiny, flavorful coating.
- Serve: Once cooked, drizzle the skewers with any remaining sauce, sprinkle with chopped cilantro or parsley, and serve with fresh lime wedges on the side for an extra burst of citrus.
