  • 2 pounds boneless, skinless chicken thighs or breasts

Sauce:

  • ¾ cup low-sodium soy sauce or tamari
  • ½ cup honey

  • juice of 1 lime

Additional:

  • 1 tablespoon cornstarch mixed with 1 tablespoon water (optional for thickening)
  • sliced green onions for garnish

Instructions

  1. Prepare Sauce: In a medium bowl, whisk together soy sauce, honey, garlic, and lime juice.
  2. Cook Chicken: Place the chicken in a 6-quart slow cooker and pour three-quarters of the sauce over the top. Cook on HIGH for 2 to 4 hours or on LOW for 4 to 6 hours.
  3. Shred Chicken: Remove the chicken, shred it, and thicken the sauce if desired with cornstarch slurry. Return shredded chicken to the slow cooker, coat in sauce, and heat through.
  4. Serve: Garnish with green onions and hot sauce if desired. Serve over rice or with vegetables.
