- 2 pounds boneless, skinless chicken breasts
- 1 (10-ounce) can diced tomatoes with green chiles (like Rotel)
- 1 (8-ounce) block cream cheese, cubed
- 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
- 1/2 cup chicken broth
- 1 1/2 cups shredded Mexican blend cheese
- 8–10 small flour or corn tortillas
- Optional toppings: chopped cilantro, sliced jalapeños, diced tomatoes, sour cream, shredded lettuce, avocado
Instructions
- Place the chicken in the slow cooker: Add chicken breasts to the bottom of the slow cooker.
- Add ingredients: Top chicken with diced tomatoes, taco seasoning, cubed cream cheese, and chicken broth.
- Cook: Cover and cook on low for 5-6 hours or high for 2.5-3 hours until chicken is tender.
- Shred chicken: Use forks to shred the chicken in the slow cooker.
- Add cheese: Stir in shredded Mexican cheese until smooth.
- Finish cooking: Cook on low for an additional 10-15 minutes to melt the cheese.
- Assemble tacos: Fill tortillas with chicken mixture, add desired toppings, and serve.
