Instructions
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add Wet Ingredients: Beat in the egg, molasses, and vanilla extract until well combined.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- Combine: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Chill Dough: Divide the dough in half, flatten into disks, and wrap in plastic wrap. Chill in the refrigerator for at least 2 hours.
- Roll and Cut: Preheat the oven to 350°F (175°C). Roll out the chilled dough, cut out shapes, and place on baking sheets.
- Bake: Bake for 8–10 minutes until edges are set and centers are soft.
- Cool and Decorate: Let cookies cool before transferring to a wire rack. Decorate as desired.
