- 2 cups cooked white rice
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Cook the Ground Beef Mixture: In a skillet, sauté onion, then add ground beef and season. Cook until browned, then drain.
- Layer the Casserole: In a 9×13-inch baking dish, layer rice, corn, beef mixture, tomatoes, and cheese.
- Bake: Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes.
- Serve: Let it rest before serving. Garnish with parsley if desired.
