Pasta:

  • 8 oz spaghetti or linguine

Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 (5 oz) can tuna in olive oil (drained)
  • 3 cups fresh baby spinach
  • 1/4 cup sun-dried tomatoes (chopped)
  • juice of 1/2 lemon
  • salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • chopped parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Boil salted water and cook pasta until al dente. Reserve pasta water.
  2. Prepare the Sauce: Sauté garlic and red pepper flakes in olive oil. Add tuna, sun-dried tomatoes, spinach, lemon juice, and cook.
  3. Combine: Toss in pasta, reserved water, and season. Heat through.
  4. Serve: Top with Parmesan cheese and parsley.
