Pasta:
- 8 oz spaghetti or linguine
Sauce:
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 (5 oz) can tuna in olive oil (drained)
- 3 cups fresh baby spinach
- 1/4 cup sun-dried tomatoes (chopped)
- juice of 1/2 lemon
- salt and black pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- chopped parsley for garnish (optional)
Instructions
- Cook the Pasta: Boil salted water and cook pasta until al dente. Reserve pasta water.
- Prepare the Sauce: Sauté garlic and red pepper flakes in olive oil. Add tuna, sun-dried tomatoes, spinach, lemon juice, and cook.
- Combine: Toss in pasta, reserved water, and season. Heat through.
- Serve: Top with Parmesan cheese and parsley.
