Lasagna Base
- 9 lasagna noodles
Vegetables
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
Cheese Mixture
- 2 cups ricotta cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Sauce and Toppings
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature while you prepare the other ingredients.
- Cook noodles: Boil the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- Sauté mushrooms: In a skillet over medium heat, sauté the sliced mushrooms until they become soft and release their moisture, about 5-7 minutes.
- Cook spinach: Add the fresh spinach to the mushrooms in the skillet and cook until the spinach wilts, stirring occasionally. Remove from heat.
- Prepare ricotta mixture: In a separate bowl, combine the ricotta cheese with garlic powder, Italian seasoning, salt, and pepper. Mix well to blend all the flavors.
- Assemble layers: Spread a layer of marinara sauce evenly in the bottom of a baking dish. Layer 3 lasagna noodles on top. Spread half of the ricotta cheese mixture over the noodles, then half of the sautéed mushroom and spinach mixture, and top with one-third of the shredded mozzarella cheese.
- Repeat layering: Add another layer of 3 noodles, then the remaining ricotta mixture, remaining mushroom and spinach mixture, and another third of mozzarella cheese.
- Finish layers: Place the last 3 noodles on top, spread the remaining marinara sauce over them, and finish by sprinkling the remaining mozzarella and all of the grated Parmesan cheese evenly on top.
- Bake lasagna: Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes until the cheese is bubbly and starts to turn golden brown.
- Rest before serving: Remove the lasagna from the oven and let it cool for about 10 minutes. This helps the layers set and makes it easier to cut and serve.

- You can add other vegetables like zucchini or bell peppers for extra flavor and nutrition.
- For a creamier texture, mix a beaten egg into the ricotta cheese mixture before layering.
- If you prefer, use no-boil lasagna noodles to save prep time.
- Cover the dish with foil while baking to prevent excessive browning, then remove foil for the last 10 minutes.
- Letting the lasagna rest after baking ensures cleaner slices when serving.
